Kaarea’s chicken noodle casserole recipe

The casserole made with chicken and noodles is a popular dish in schools and daycare centers. With this recipe, you can make this treat at home!

School-style chicken noodle casserole

4 servings

2 tbsp rapeseed oil
1 pkg (600 g) unseasoned chicken strips
1 chopped pepper
1 chopped onion
1 tbsp curry powder
1 tsp turmeric powder
1 tsp dried ginger
½ tsp crushed black pepper
2 dl coconut milk
2 dl chicken stock
1 pkg (225 g) rice noodles

  1. Heat the rapeseed oil in a saucepan until hot. Add the chicken, peppers, and onions to the oil. Fry for about 3–4 minutes.
  2. Add the curry powder, turmeric, ginger, and black pepper. Cook for about one more minute.
  3. Stir in the coconut milk and chicken stock and bring to a boil.
  4. Layer the chicken sauce and rice noodles in a baking dish, finishing with a layer of sauce on top. Gently separate the noodles with your hands if needed.
  5. Bake at 175°C in a fan oven for 10–15 minutes.
  6. Serve with a fresh salad.
