Kaarea’s vegetable purée soup recipe

Kaarea’s vegetable purée soup is a beloved dish in schools and daycare centers with this recipe, you can prepare it easily at home!

School-style vegetable purée soup

6 servings

8 starchy potatoes (about 680 g)
4 carrots (about 400 g)
250 g broccoli (fresh or frozen)
1 vegetable stock cube
A pinch of black pepper
1 tsp tarragon
½ tsp chervil
1 tsp salt
1½ dl cooking cream
50 g soft cream cheese

For serving:

Cottage cheese or half a boiled egg
A baked baguette or your favorite bread

Instructions

  1. Peel and chop the carrots and potatoes. Cook them in a small amount of water for 15 minutes. Add the broccoli and stock cube, and continue cooking for another 15 minutes.
     
  2. Purée the vegetables using a hand blender. Stir in the spices, cream, and cream cheese. Let the soup simmer until the cheese has melted.
     
  3. If the soup is too thick, add some boiling water. Check the flavor and adjust salt if needed. Serve the soup with cottage cheese or a boiled egg and freshly baked bread.
